Hot Spinach Dip-my rendition

Surfing for ideas for the ubiquitous office potluck, I was looking for a hot dip recipe using crabmeat. I found a recipe that called for cream cheese and shrimp soup, which seemed like a idea in the right direction, but not exactly what I wanted. I tweaked a couple of recipes together and came up with something quite nice. It is VERY rich, but that's what makes it delicious.


4-6 oz lump crabmeat
8oz package of cream cheese
14 oz jar of pre-made alfredo sauce
large handful of spinach, chopped
1 cup of shredded parmesan
2 tablespoons of balsamic vinegar
roasted garlic, as much as you like

Put all the ingredients except the crab in a bowl, poke the bowl into the microwave for 2 minutes. Take it out and stir thoroughly until the cream cheese is completely blended, then mix in the crabmeat. Microwave it again for another couple of minutes, or until bubbly. It's even better if you sprinkle a bit more parmesan on top and bake it. Dip bread chunks or tortilla chips in it, and enjoy! I'm thinking that this would be good with chopped artichoke hearts and roasted red peppers as well.


This is one of a couple of recipes in which I use one of my secret cheats; pre-made alfredo sauce.

That might be good baked on top of biscuits, similarly to the "uglies" that you've mentioned.
